As a butcher, you ideally know all stages of butchering from skinning to post-cleaning of the carcass. You will be working mainly in the skinning stages of the carcass (hind legs, front legs, abdominal area, and neck skinning). However, you will also work in various other stages of hide removal, head washing, esophagus tying, gutting, and splitting the carcass with a saw. Animal slaughter is not part of the job. Speed and accuracy are the main requirements for the role, as employees have to keep up with the line speed.

As a meat cutter, you will work in the cutting room where the Marelin cutting line is used. The meat comes to the cutter as pieces detached from the carcass, so all main parts of the carcass must be known for cutting.
